RECIPES: Kolaches

Kolaches

1 1/2 cup milk (lukewarm)

1 egg (beaten)

3 tablespoons sugar

1/4 cup shortening

1 1/2 teaspoon salt

1 cake or 1

package dry yeast

1/4 cup warm water

3 1/2 cups flour

Prune filling:

1 pound prunes

3/4 cup sugar

Pinch of cloves or 1

teaspoon lemon rind

Peach filling:

1 large can peaches

1/2 cup sugar

1 tablespoon corn starch

Dissolve yeast in 1/4 cup of warm water. Put milk, dissolved yeast, egg, sugar, shortening and salt in mixing bowl. Add a little flour and beat well. Gradually add remaining flour. Knead about 8 minutes until dough is smooth.

Grease dough lightly and let rise until double. Make into balls the size of a large walnut. Place on greased pan and pat down slightly. Grease lightly with lard and let rise again 20 minutes in a warm place.

Make impression in balls and fill with your favorite filling. Let rise again for 20 to 25 minutes.

Bake in preheated 450 degree F oven until lightly browned (watch closely). Brush with shortening and remove to cooling rack. Makes approximately three dozen.

Prune filling: Rinse prunes and cover with water. Cook until soft. Cool. Remove the seeds and add sugar and cloves or lemon rind. Mash and use for filling in kolaches.

Peach filling: Drain peaches leaving just a little juice. Mash peaches, add sugar and cornstarch. Mix and bring to a boil. Cook until thick and clear.
